Fresh Start Challenge Day 11: The Way to Any Man's Heart Is Through His Stomach

This is probably one of the most request dishes Chris ask from me. He loves Enchilada Lasagna. I came across the recipe a couple of years ago on Pinterest. (Yeah I was a member back when it was only by email.)

I enjoy making this for my friends and my family. It makes for something different in our house. I love it just because it's so different than what we normally make.



Ingredients 

  • 2 tbsp of vegetable oil
  • 1 lbs chicken breast, chopped to bite pieces
  • 1 can of cream of celery
  • 1 can of cream of chicken
  • 5 cups of mexican blend cheese
  • 1 1/2 cups sour cream
  • 1/4 cup canned and chopped green chillies (drained)
  • small corn tortillas
  • 1 tsp cumin
  • 2 tsp salt
  • 1/2 tsp pepper

Directions:
Start out by preheating the oven 425 degrees. 

Brown chicken in a pan on 2 tbsp of oil. Season with salt and pepper.

In a bowl combine cream of celery, cream of chicken, sour cream and green chilies.

Prepare the dish you will assemble the lasagna in. 

Put 1/2 cup of cream mix on the bottom of the baking dish and spread. 

Layer a row of tortillas followed with cream mix, chicken and cheese. 

You should be able to make 3 layers like this. Last layer doesn't need chicken, just a ton of cheese.

Let it bake for about 20 minutes or until cheese is nice and melted and golden brown on top!

Chris' Meatloaf


I love comfort food. Thank goodness I found a man that can not only cook, but also can make food that helps cheer a girl up. His specialty is Italian food. However, one thing that he makes stands out above the rest. It is the best meatloaf I have ever had in my life.



There is only one meatloaf that comes close and it was at Disney World. However, they made theirs with gravy which was okay.  Chris makes his with this amazing glaze. He made it last night and it was delicious even today for lunch! I love it and I asked for it at least once every two weeks.

Below is his recipe that he uses and the index card that he has it wrote on is so worn out that I had a slight difficulty reading, but he helped me:

2 lb. ground beef
2 large eggs beaten
1 package meatloaf seasoning
1 box of Stove Top stuffing©
(Optional) 1 small can of Italian tomato sauce
Mix together and put into a dish that has been sprayed with cooking sprayed. Bake 45 minutes on 350⁰.

Mix ketchup and brown sugar for glaze (there is really no measurement for this just mix until it makes enough glaze to cover how much  of the meatloaf.)

About 15 minutes before done put the glaze on top and then finish baking.

Just own the night like the 4th of July


I love celebrating this even if it is not where either side of my family originated.
I am going to be really busy today therefore there will be no craft or recipe today. Though I have done several crafts and recipes for today.

Totally Awesome Tortellini Alfredo

I've only made this once before and it was delicious. I am making it for Chris and mine's one month anniversary that is Friday, however, we are celebrating it on Saturday when he gets off from work.
I don't have pictures for this so I'm going to write it out the best I can. This recipe takes about 25 miniutes and makes 4 to 5 servings. Though Chris can eat half of it.

Utensils that I use are:

  • Cutting board
  • Sharp knife
  • Large saucepan
  • Colander
  • Measuring cups
  • Measuring spoons
  • Rubber scrapper (spatula for the southern folks)
  • Wire whisk
Ingredients
  • 1 8-oz cooked boneless ham slice (or get already cubed ham)
  • 1 9-oz packaged refrigerated three-cheese tortellini
  • 1 1/2 cups packaged broccoli florets
  • 1 tablespoon butter
  • 1/2 teaspoon bottled minced garlic
  • 1 8-ounce tub cream cheese
  • 1/2 cup milk
  • Dash black pepper
  • 1/2 cup grated Parmesan cheese
How to Make It
  1. On a cutting board use the sharp knife to cut the ham into small pieces. If you have the prepackage already cubed ham just save unitl step 3.
  2. Cook tortellini in the large saucepan following the package directions, adding the broccoli with the the pasta so they can cook at the same time. Turn off the burner. Remove saucepan from burner. Place colander in your sink. Carefully pour tortellini mixture into the colander to drain.
  3. Add butter to the empty saucepan. Put the saucepan on a burner. Turn burner to medium-low heat. Cook about 20 seconds or until butter is melted. Carefully add garlic. Cook for 30 seconds,  stirring with wooden spoon. Use the rubber scraper to remove  half of the cream cheese from the tube and carefully add to the saucepan. Save remaining cream cheese for another use. Add milk to the saucepan. Use the wire whisk to stir until mixture is smooth. Stir in the ham and pepper. Cook and stir for 2 minutes more. Turn off buner. Remove saucepan from burner.
  4. Add the tortellini mixture to the ham mixture in the saucepan, Using the wooden spoon, gently stir until combined. Pass Parmesan cheese to sprinkle over the tortellini.
Serve with... breadsticks, sherbet for dessert, and milk.

I Can't Believe It's Not Chick-fil-A®!

So as some people may have figured out I'm slightly obsessed with Pinterest. And those reasons will come in a post later.

One thing I love about the website is that you can find recipes of all sorts with variations of the same dish. Now anyone who knows me personally know I love fast food, or just eating out in general. Places people think are are nice dress pants and button down shirt places I have rocked Spring Break tshirts and shorts at. But that is a different story that probably only my family knows about.

For those of you who don't I am out on my own. I live near my dad but not with him. I have own my own condo/apartment whatever you want to call it. I have an upstairs, three bedrooms, and 3 bathrooms. And with that comes a bill for owning the place. So I had to stop eating out some (lol some). So one night while I'm scrolling through Pinterest pictures I find chicken that looks exactly like -Cue drum roll-......... Chick-fil-A® chicken nuggets.
But it was homemade........ Chick-fil-A® every night without the cost?!?!?!? This girl was not a believer. So I clicked on the picture and was introduced to this blog; My Name is Snickerdoodle.

I decided that Saturday that I had to try it. So I followed the recipe as listed on the blog. I will post the ingredients but not list everything it takes to make because I don't want credit for this amazing recipe. Its not the exact same but let me just say I haven't had Chick-fil-A® in a while because it is so close to the original recipe. Now to learn to make the honey mustard from there.

2 skinless and boneless chicken breasts
1 cup milk
1 egg
1 1/4 cups flour
2 TBSP powdered sugar
2 tsp salt
1 tsp pepper
peanut oil (is best) or canola oil
